From Quality Control to Industry Leadership: Sharon Beals on The Meat Locker

The Summer Olympic Games are here and what a great time to be cheering on your favorite team/sport/athlete! So thankful for the live streams (and the later rebroadcasts), to see these athletes at the very top of their game. So, what does this have to do with the launch of the Meat Locker? Have you seen what the athletes are saying about the food and the specific lack of protein provided? That’s what our industry does; we nourish and fuel bodies to do amazing things like bike 20 miles in the pouring rain or fly through the air twisting and turning before landing on the mat or entering the pool with barely a ripple.

I’m Sharon Beals and I am the President Elect of the American Meat Science Association, an organization that I have been a proud member of since nearly the start of my career when I was the sole QC Technician on 2nd shift at Land O’ Frost of Indiana. 44 years later, all of them spent in Food Safety, Quality, Regulatory Compliance and Technical Services, I’ve have been on the frontlines of significant changes in our industry from BSE to E. coli O157:H7 adulterant status to HACCP implementation, to name a few. More importantly, I have had a front row seat to the tremendous efforts that we have made making our meat and poultry products safer and more convenient. And that’s where the Meat Locker comes in.

Regulations, best practices, practical advice, and institutional knowledge are hard to find in a one-stop shop. Things keep moving and it’s hard to stay up to date.
