Sanitation SOPs (Standard Operating Procedures)

Preventing direct contamination or adulteration of product requires written and implemented Standard Operating Procedures (SOPs).

This reference document helps meat producers and retailers develop an appropriate and approved Sanitation SOP model to prevent direct contamination or adulteration of product. These written procedures must remain on file and be available to Food Safety and Inspection Service (FSIS) personnel.
